Marry Me Chicken is a creamy, flavorful dish featuring tender chicken breasts (or thighs) simmered in a rich sundried tomato and Parmesan sauce. This easy-to-make recipe is perfect for romantic dinners or family meals, delivering comforting flavors with a gourmet touch.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 3 cloves garlic, minced (adjust to taste)
  • 1/3 cup sundried tomatoes, chopped (preferably in oil)
  • 1/2 cup chicken stock (store-bought or homemade)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning (or substitute with dried thyme)
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Directions

Prepare the Chicken: Sprinkle salt and pepper on the chicken breasts or thighs. Pound slightly for even cooking if needed.

Sear the Chicken: Warm olive oil in a large skillet over medium heat. Sear the chicken on both sides until golden brown but not fully cooked, about 3-4 minutes per side. Remove from skillet and set aside.

Make the Sauce: In the same skillet, cook the minced garlic until fragrant (about 1 minute). Then, add the chopped sundried tomatoes and cook for another minute.

Combine Ingredients: Stir in chicken stock, heavy cream, and Italian seasoning. Bring to a simmer and add the Parmesan cheese, stirring until melted and the sauce thickens slightly.

Simmer the Chicken: Place the chicken back in the skillet and spoon the sauce over it . Cover and simmer for 8-10 minutes, or until the chicken is fully cooked and the sauce coats it well.

Serve: Garnish with fresh parsley or basil, and serve with pasta, rice, or crusty bread to soak up the creamy sauce.
